Aunt Martha's Kale Salad
Combine the following:
-1 bunch kale, rib removed, chopped and massaged
-minced red onion
-minced fresh garlic
-chopped toasted walnuts (chop first, then toast in a dry pan)
-fresh grated parmesan cheese
Toss with a dressing of half fresh lemon juice and half good quality olive oil, add salt.
If you don't love kale yet, you will after you try this. YUM!
